| Mixed Roasted Vegetables |

| Cut up various firm vegetables such as winter squash, red onions, and potatoes. Sprinkle with salt and pepper and just enough olive oil to coat. Spread on a baking sheet and roast in a 400 degree oven until almost done. Add maple syrup and toss and return to the oven for another 5-10 minutes, |
